Portland Chefs Create Gourmet Raw Menu for Caribbean Cruise

PORTLAND, Ore - Carnival Cruises continues to lead the industry
in offering delicious, healthy shipboard cuisine by introducing
its first all-day, all-raw cruise menu. Created by Portland's
SmartMonkey Foods, the ultra-healthy, environmentally-friendly
fare will debut on a Carnival Caribbean cruise this month.
Recognized for pioneering healthy cruise cuisine, Carnival was
among the first cruise operators to include vegetarian options
at every meal. Raw foods, also known as living foods, are the
next step in providing active, health-conscious, environmentally-aware
passengers with the fresh, energy-boosting food they prefer. SmartMonkey
chefs Ani Phyo and Ede Schweizer are excited about their collaboration
with Carnival. "Living foods are gaining popularity all over the
world," says Phyo. "It's healthy for people and it's healthy for
the planet. The fact that Carnival recognizes it's passengers
want healthier gourmet cuisine shows that raw is moving into the
mainstream. This is something of a milestone for the raw community
and we're thrilled to be a part of it."
SmartMonkey Foods created an inspired "Cruise Your Way to Good
Health" menu to match Carnival's reputation for abundant, mouth
watering spreads. Passengers will enjoy an array of raw breakfast
options like Morning Magic Tonic (a passionate blend of lemon
juice, ginger, and spring water infused with leaves of mint),
Muesli Breakfast Cereal (a European inspired mix of Brazil nuts,
almonds and walnuts, soaked with Almond Milk and creamy blueberry
sauce), an exotic Fresh Fruit Salad (mangoes, bananas, pineapple,
apples, pears, grapes and melons topped with shaved coconut and
nutmeg), and Berry Beautiful Cobbler (a smooth Brazil nut filling
smothered in blueberry syrup and topped with fresh blackberries).
Raw lunch options span the global palate with international dishes
like Italian Herb Gazpacho, Collard Spring Rolls and Thai "Peanut"
Sauce, Caribbean Kaleslaw with Sesame Wakame, and Mexicalli Salad
with Guacamole and Salsa. Lunch is topped off by decadent but
guilt-free raw desserts including Pecan Pie and Lemon Coconut
Bars with Raspberry Compote.
SmartMonkey Foods' gourmet raw dinner menu will tempt passengers'
taste buds and their imaginations, beginning with Raspberry and
Lemon Herbal Elixir (a soothing blend of lemon juice, raspberries,
blueberries, and dates infused with a hint of mint) and Orange
Dream Potion (an enlightening combo of Almond Milk, orange juice,
banana and Tahitian vanilla bean). The feast continues with Atlantic
Sea Soup, Creamy Mushroom Soup, Good-For-You Greens in a Creamy
Curry, and Lots-Of-Lettuce in an Orange Miso Dressing. Enticing
and inspired living food entrees feature Save-The-Salmon Cakes
with Hollandaise Sauce, as well as Satay Skewers and Thai 'Peanut'
Sauce. Dessert is nothing less than heaven with a Carob and Almond
Crunch Wedge and Banana Split in the Raw.
After enjoying the opulent spread of fresh, healthy, gourmet
raw cuisine, passengers will feel energized, ready to enjoy Carnival's
cornucopia of cruise activities. Whether snorkeling, swimming,
sightseeing, working out in the ship's gym, or dancing the night
away, Carnival guests will appreciate the vitality raw cuisine
provides to maximize their cruising experience.
By introducing raw food into it's dining selection, Carnival
